Watermelon Mojito Salad
It’s hot. The weekend is near. The pool is sparkling. You don’t want to cook. And you are craving something cold and refreshing. Well, have I got a recipe for you! This Watermelon Mojito Salad will check all the boxes for your next summer pool party side dish. A special thank you to the Sweet Simple Vegan for the recipe.
Ingredients
4 lbs (about 6 cups) seedless watermelon, cut into small chunks
1/4 cup fresh lime juice
1/2 cup mint leaves, roughly chopped
1/4–1/2 teaspoon salt, or to taste
Cayenne pepper, to taste
Other ingredients that would go well with this: 1/2 cup diced cucumber, 1/2 cup diced berries, and rum (about 1/4 cup)
Instructions
Toss all ingredients in a large bowl.
Set in the refrigerator to cool and enjoy!
